Easy Shrimp and Quinoa Bowl đ€
In episode 6: Eat the foods that fuel you, Brian O’Neill, Offensive Tackle for the Minnesota Vikings, discussed how eliminating gluten and dairy from his diet has improved his performance and how he feels. I know that reducing gluten and dairy can be intimidating, so I wanted to show you a delicious and easy meal that you can make at home in less than 30-minutes.
Ingredients:
– 1 bag of @wholefoods organic frozen white quinoa
– 1 12 oz. bag of Whole Catch wild caught Key West pink shrimp
– 2 vine tomatoes
– 1 zucchini
– 1 cup of frozen spinach
– 3 garlic cloves
– 1 tbsp Italian seasoning
– 1 tsp dried basil
– 1 tsp crushed red pepper
– 1/3 block of @miyokoscreamery vegan mozzarella
– 1 tbsp avocado oil
Recipe:
1) Defrost frozen shrimp by following instructions on bag.
2) Sear shrimp in pan until cooked through. Then, remove from pan and put on a plate.
3) Dice tomatoes, chop zucchini, and mince garlic.
4) Add avocado oil, tomatoes, zucchini, spinach and garlic to pan. Cook for 5 minutes.
5) While veggies are cooking, microwave quinoa following instructions on bag.
6) Add quinoa and cooked shrimp to the pan. Cook for 5 minutes.
6) Add sliced mozzarella, Italian seasoning, basil, and crushed red pepper to the pan. Cook for 1-2 more minutes.
7) Bon smack the teeth
This is a great, balanced meal because you have protein from the shrimp, whole grains from the quinoa, fruit and veggies, and fat from the mozzarella & avocado oil!
This recipe makes 4 servings đ I was inspired to make this dish by @herhighnesshungryme 15-minute spicy shrimp and quinoa recipe. I bought all of my ingredients for this meal at @wholefoods but Iâm sure you can find very similar ingredients at any grocery store.
